I just tasted my Spruce Tip IPA that I brewed two weeks ago and it tastes like mustard! The hydrometer sample tasted great a few days ago so this is really weird! The recipe is a pretty straight forward malt bill with cascade and Simcoe hops added at various times, orange and lemon peel at flame out and 6 oz fresh spruce tips at flame out also. The hydrometer sample tasted of citrus and pine. Now it tastes like it would go great with a hot dog! What the hell happened?
